Buat kek ni sebagai buah tangan untuk our former neighbor yang kami telah 'menyusahkan' mereka simpan kunci rumah. The couple, just our next immediate neighbor and had been our neighbor for 18 years...CNY and Raya we never missed celebrated together while staying next to each other.
So buat lah dua biji, one for them, another for us to munch while back home to check our house done with renovation. We stay at the house. Soon after the tenant left a few months ago we immediately proceed the renovation work...So that's the story behind the neighbor keeping our house key...to this date our house is still vacant. The previous experienced made us very picky in getting the tenant.
So back to baking, anyone who would like to try, here's the recipe.
225 g butter
450 g Granny smith apple
Finely grated zest and juice of 1 lemon
225 g caster sugar plus xtra for dredging
3 large eggs
225 g Self raising flour
2 tsp baking pdr
25 g ground almonds
1 1/2 tbsp light brown sugar
Grease a deep 25 cm spring form cake pan (saya guna mould bulat biasa je)
Peel, core and cut apple into 1 cm pcs, and toss with lemon juice. Cream butter, caster sugar and lemon zest till pale and fluffy. Beat in eggs 1 at a time, adding a little flour with each addition to keep the mixture smooth.
Sift the remaining flour and baking powder into the bowl and fold in ground almonds.
Drain the apple pieces well, then stir into the mixture.
Spoon into prepared pan, lightly level the top and sprinkle with brown sugar. Bake for 1 hour. If the cake is too brown but not yet done cover with aluminium foil. Dredge heavily castor sugar on the top. (when cake is cooling)
Note: I omit the sugar dredging....and also, I arranged thinly sliced apple on top.
